  •  ANY BEEF STEW WILL BENEFIT FROM A LITTLE MAPLE SYRUP

Morsels: Slow cooker maple beef stew

Maple Beef Stew is a wonderful way to anticipate the coming maple season, especially if you have been out in the woods all day.  Having it ready to serve and eat is like going out to dinner at home!

Almost any beef stew (your favorite recipe) will benefit from the addition of a little maple syrup, dark is best, but this recipe is A good one.  

 

2 pounds beef stew meat

2 c.  carrots sliced diagonally, or equivalent

2 tablespoons tomato paste of small sized carrots.

1 envelope onion soup mix

1 28 oz. can crushed tomatoes

2 cloves garlic, chopped

½ c. chopped onion

½ c. dark amber maple syrup

2 tablespoons tapioca

 

Combine all ingredients in the slow cooker, stir, and cook on high for 6 - 8 hours, until meat is tender, and will break apart with a fork.  This stew is super when served over thick noodles, with a green salad, and a fresh roll.  I usually double the amount – leftovers are more than welcome!
