INGREDIENTS
¾ cup maple vinegar (if not available, substitute apple cider vinegar)
1 ½ cups darker grade Pure Maple Syrup
¾ cup catsup
¾ cup olive oil, or your preferred salad oil
3 teaspoons horseradish (less or more to your own taste)
1 ½ teaspoons minced garlic (processed or fresh)
PREPARATION
Pour liquid ingredients into a quart canning jar or equivalent. Add the horseradish and garlic. Tightly cap the jar and shake, or combine the ingredients with a stick blender. Refrigerated, this dressing will keep well, and is especially nice for adding maple flavor to green salads. It is low in salt content, and by making a quart at a time, smaller quantities can be poured into a favorite cruet as needed.
